Strawberry Rhubarb Pie

It occurs to me that at 8:00 am, strawberry rhubarb pie is breakfast pastry, but at 8:00 pm, it is dessert!

Hmmmm
Rhubarb is a vegetable (seriously) and aren’t we supposed to eat our veggies?

I say rhubarb pie is good for you ANY time of day – eat your veggies!

@Deb Rhubarb for me was a sour weed growing along my neighbor’s back fence in the house I grew up in in St. Paul, MN. I only discovered it was actually USED to cook stuff later in life. For me, it just brings back childhood memories of carefree summers of being an urban rat where playing baseball in sandlots and walking the Burlington Northern train tracks without parental supervision was the thing to do. :-)

So, a slice of rhubarb pie is more than a vegetable or fruit; it is cultural fabric. It is a “time machine.”
